I go in phases with my baking. In January, I couldn’t get enough of baking with chai. In February, so far I haven’t been able to stay away from berries, red wine, and chocolate. Today’s recipe is another result of my February baking obsession. Say hello to red wine brownies!
I truly don’t think I’ve ever made a better brownie than these. And I LOVE my double chocolate brownies so that’s saying a lot.
These bad boys though? They’re the FUDGIEST, most decadent brownies I’ve ever made in my entire life. I’ve made my fair share of brownies, so I feel pretty confident in saying that.
The key to any good brownie is high quality chocolate. In this case, I used my favourite ghirardelli bittersweet chocolate bars and paired them with a local Pinot noir to create what is honestly the brownie of my dreams. I almost wish I had made like 3498742 batches of these because I genuinely want everyone I know to try these. I’m even thinking of sending a few of these to a friend across the country, just so they don’t miss out on the experience.
(They aren’t a baker, if they were, I would 100% make them bake them for themselves. It just wouldn’t end well!)
Grab some good chocolate and a bottle of your favourite pinot noir, then run to the kitchen to make these brownies. If you love a fudge brownie, you’ll love these!
Red Wine Brownies
Ingredients
- 1/2 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 1/2 tsp espresso powder
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup (2 sticks) unsalted butter
- 4 oz bittersweet chocolate, chopped
- 1 1/2 cups light brown sugar
- 2 eggs
- 1 egg yolk
- 1 tsp vanilla extract
- 1/4 cup pinot noir
Directions
- Step 1 Preheat oven to 350°F. Grease a 8×8 pan and line with parchment paper.
- Step 2 In a bowl, combine the flour, cocoa powder, espresso powder, baking powder and salt. Set aside.
- Step 3 Melt the butter and chocolate together over a double boiler. Once melted and combined, whisk in the brown sugar.
- Step 4 Add the eggs, egg yolk, and vanilla extract, whisking to combine.
- Step 5 Gently fold in the flour mixture, then add the red wine and continue folding until the wine has been incorporated.
- Step 6 Pour the batter into the prepared baking pan and bake for 35-40 minutes.
- Step 7 Allow brownies to cool in the pan.
