White Cheddar Bacon Scones

Sometimes, you just need to eat something that involves cheese and bacon. This week, that something happens to be these white cheddar bacon scones.

 

You guys, I don’t know what it is, but there is something about savoury scones that I just love so much more than your traditional sweet scone. Maybe it’s the excuse to add cheese to everything. Or maybe it’s that I’m the weird baker that will bake all day and night but would actually rather eat something savoury or salty over something sweet.

It doesn’t really matter what the reason is, but I’m here to say: savoury scones forever.

Like all of my favourite people, I’m completely obsessed with cheese so it’s only natural that plenty of sharp white cheddar made its way into these dream circles. Honestly, I was thinking scones and my brain said “bacon and cheese!”. I don’t always listen to things my brain suggests but I did this time and I’m oh-so glad I did.

These scones are life.

Traditional basic scone dough. Flour, baking powder, baking soda, salt, butter, eggs, and buttermilk. Then, we’re adding plenty of sharp white cheddar, all the bacon we can handle and some chives. Because we could use a little bit of green to make ourselves feel better about not being able to stop eating these.

I actually came home from work one day the week after I made these, expecting to be able to eat one and they were all gone. GONE. Next time I’ll have to hide a little supply for myself. These really are too good to miss out on.

The key to any good scone is really cold butter, and not overworking the dough. We don’t want tough scones, we want light and fluffy scones. Light and fluffy scones with all the cheese and bacon we can handle.

White Cheddar Bacon Scones

Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp. baking powder
  • 1/4 tsp. baking soda
  • 2 tsp. salt
  • 1/2 cup (1 stick) unsalted butter, cold and cut into cubes
  • 2 eggs
  • 1/2 cup buttermilk
  • 2 cups white cheddar cheese
  • 10 rashers of bacon, cooked and diced
  • Handful of chives, chopped
  • 1 egg white, beaten, for brushing
Directions
  • Step 1 Preheat oven to 400°F and line a baking sheet with parchment. Set aside.
  • Step 2 Combine the flour, baking powder, baking soda and salt in a bowl. Add the cold, cubed butter and mix using your hands or a pastry blender until the mixture resembles coarse crumbs.
  • Step 3 Whisk the two eggs and buttermilk together and add to the flour/butter mixture, mix together. Add the cheese, bacon, and chives and mix until just combined.
  • Step 4 Turn the dough out onto a lightly floured surface and knead until smooth, about 30 seconds. Pat into a 1/2″ thick round of dough. Use a round cookie cutter to cut out the scone circles. Reroll any extra dough and cut out more circles until all of the dough has been used.
  • Step 5 Place on your baking sheet and brush with the beaten egg white. Bake for 12 minutes, until lightly golden brown.
