Peppermint Fudge

You guys. This fudge is insane. Peppermint. Chocolate. And it comes together in about 10 minutes. I mean, is there an easier, more beautiful holiday treat? I don’t think so. 

I mean, really. Place everything in a bowl over simmering water. Stir it so the chocolate doesn’t burn. Once it’s thick and smooth, pour it into a pan, smooth it, sprinkle with crushed peppermint, and throw it in the fridge for a few hours. Slice it up and you’re ready to go!

While everyone else is painstakingly decorating sugar cookies, you could be making this fudge and snuggling up on your couch with some hot cocoa. Don’t get me wrong, there’s a time and place for sugar cookie decorating, I’m just focusing that energy elsewhere this year. 

I wasn’t actually planning on putting this recipe on the blog this week, but I’m so obsessed with it that it bumped a few other things. You’ll get those recipes soon, though, I promise. I’ve wrapped it all up for a bake sale at work on Thursday and I’m so excited for my coworkers to get their hands on it!

I had my first day back at work after my surgery yesterday (I was gone for a month!), and oh. my. goodness. I can honestly say I’ve never, ever felt so loved, or received so many hugs, in my entire life. It felt so good to be back around some of my favourite people and I’m going to enjoy the overflow of love all week long.

Make this fudge. Share it with your friends and family. Or don’t, that’s cool too. I think you’ll want to, though. This fudge is guaranteed to put a smile on the face of anyone that eats it – unless they don’t like peppermint, in which case, rethink your friendship. 

I’m just kidding, you don’t have to rethink your friendships. If your friends prefer the extra festive chocolate orange pairing, you can substitute the peppermint extract for vanilla extract and grate in the zest of an orange to combine with your other ingredients. It’s sooooooooooooooooooo GOOD.

Peppermint Fudge

Ingredients
  • 20 oz. semisweet chocolate, chopped
  • 1 can (14 oz.) sweetened condensed milk
  • 1/2 tsp. peppermint extract
  • 3 tbsp. unsalted butter, room temperature
  • Crushed peppermint, for topping
Directions
  • Step 1 Grease and line an 8×8″ baking pan with parchment paper, allow some to hang over the edges.
  • Step 2 Place chopped chocolate, sweetened condensed milk, peppermint extract, and butter together in a heatproof bowl.
  • Step 3 Bring a pot filled about 1/4-1/2 full with water to a boil. Lower to a simmer and place bowl on top. Stir frequently, until ingredients are completely melted and have thickened, about 8-10 minutes.
  • Step 4 Once thickened, pour into your prepared plan and smooth out evenly. Sprinkle with crushed peppermint. Place in your fridge for at least 2 hours, until completely set.
  • Step 5 Use a knife or offset spatula to gently release fudge from the edges of your plan, remove, and cut into pieces. It is quite a rich fudge so you don’t want huge squares.
  • Step 6 Keep refrigerated until ready to eat.
