If you’re anything like me, you love brownies. So let me introduce you to your new favourite brownie: mini egg brownies!
It’s that time of year, my friends. All things mini eggs, all the time. I don’t know anyone who doesn’t love Cadbury Mini Eggs and honestly, I’m not sure I could trust someone who doesn’t.
Cadbury’s mini eggs are 100% the best Easter candy. Don’t fight me on this, its true. Milk chocolate surrounded by a crunchy, colourful candy shell. The BEST! I’ve already added them to cupcakes, rice krispie treats, macarons, and cookies so this year it was time to add them to something else and blondies and brownies it was.
If your team brownies over team blondies, these are the Easter treat for you. There is so much chocolate flavour in these bad boys and the mini eggs just take them over the top.
You don’t want to miss these, trust me.
These mini egg brownies are so easy to make. Melt your unsweetened chocolate and your butter, add in the sugars (white and brown because we know what’s good for us), eggs, vanilla, dry ingredients, and then the star of the show: Cadbury Mini Eggs!
If you’re anything like me, you’ll want to snack on the mini eggs as you’re making the brownies. I fully support this, but make sure you save enough mini eggs for the brownies! We can’t call them mini egg brownies if we’ve eaten our most important ingredient!
These are really easy to pull together so you can spend more time with your family this weekend and less time in the kitchen. More time eating, less time cleaning. I’m just here to optimize your time for you. Optimize your time and encourage you to eat all of the Cadbury mini eggs you can handle.
Ingredients
- 3/4 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup (1 stick) unsalted butter
- 3 oz. unsweetened chocolate
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 2 eggs
- 1 egg yolk
- 1 tsp. vanilla extract
- 1 cup Cadbury mini eggs
Instructions
- Preheat oven to 350°F. Butter an 8" square baking pan and line with parchment paper, letting it hang over the edges. Butter the parchment paper and set aside.
- In a small bowl, whisk together the flour, baking powder and salt; set aside.
- Bring some water to a simmer in a medium saucepan. Place the butter and unsweetened chocolate in a heatproof bowl and put on top of simmering pan, making sure the bowl doesn't touch the water. Stir occasionally until the butter and chocolate have completely melted. Remove bowl from saucepan and whisk in both sugars. Once combined, whisk in both eggs, the egg yolk and vanilla extract.
- Add flour mixture and fold it into the chocolate mixture using a rubber spatula. Fold in the Cadbury mini eggs.
- Pour mixture into prepared pan and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean. Allow to cool completely before cutting.
