Mexican Hot Chocolate

This Mexican hot chocolate first appeared on the blog just over 6 (!!) years ago at the end of 2014 and it was definitely time for it to get a little upgrade. New pictures, slightly tweaked recipe and enough whipped cream dolloped on top to create a huge mess. A giant mess is pretty emblematic of the last 12 months, right?

When this recipe first appeared here on the blog, the year before was bookended with two knee surgeries, one in January and one in December. Safe to say 2014 was not my year. So far in the first three weeks of this year, I’ve been able to avoid another surgery, but I did have yet another one in October last year and I’ve spent the last 3 months trying to get it to recover. It’s a super slow process and I’m not sure we’re really getting anywhere, but we’ll see.

But let’s talk about this hot chocolate. 

I’m not going to lie, I’m typically not super into hot chocolate. I just prefer not to drink my chocolate.

This Mexican hot chocolate though. It takes it to a whole new level. It’s got a little spice and is guaranteed to warm you up from the top of your head to the tips of your toes. The cinnamon and chile powder can take all the credit for that! It’s basically a comfort meal in beverage form. SO GOOD.

This is also so unbelievably easy to make. You just throw the ingredients in a pot, heat it up, mix it well, let all of the flavours come together, then just pour it in mugs. I like to add a cup of water to the mixture so it isn’t too thick, but the amount of water you use is a personal preference. A messy dollop or two of whipped cream on top are optional, but definitely encouraged. Maybe also add a little sprinkle of cinnamon? Yes, please!

Ingredients
  • 4 cups milk
  • 1 1/2 cups chocolate chips
  • 2 tbsp. sugar
  • 2 tsp. vanilla extract
  • 1/2 tsp. chile powder
  • 1/4 tsp. ground cinnamon
  • Pinch salt
  • 1 cup water (if you like really thick hot chocolate, leave this out)
Directions
  • Step 1 In a large saucepan, combine all ingredients over medium heat, whisking constantly until hot but not boiling, about 8 minutes (mixture should be smooth). Pour into mugs and top with whipped cream, if desired.
