Before I was sent this product I’d never had coconut water — I liked it! It’s sweet and has a very subtle coconut flavour. If you’re looking for a coconut water made with nothing but organic coconut water, I recommend that you check out this product. It would make a great addition to your morning smoothie (if that’s your thing)!
I can’t see myself drinking this coconut water everyday, but it would be great after a workout and I’ll definitely be using it in different recipes like this coconut rice.
This rice is really easy to make and is a great dish to partner with curry, chicken dishes or just on its own. I added turmeric because I wanted to have some colour, but feel free to leave that out if you don’t want it.
Onion, ginger and garlic give the rice a little more texture and flavour. I added coconut milk too because it has more of a coconut flavour than the coconut water does and I think they paired really well together.
Coconut Rice
Ingredients
- 2 cups basmati or jasmine rice
- 1 tbsp. peanut oil
- 1 medium onion, diced
- 1 tbsp. minced ginger
- 2 garlic cloves, minced
- 1/2 tsp. salt
- 1/4 tsp. turmeric (optional)
- 2 cups COCOZIA Organic Coconut Water
- 1 can (13.5 fl. oz.) coconut milk
Directions
- Step 1 Soak the rice for 30 minutes, then drain.
- Step 2 In a saucepan, heat the peanut oil. Add onion and ginger and cook about 6 minutes. Add the garlic and sauté for 30 seconds.
- Step 3 Add rice, salt and turmeric (if using) and stir to coat rice grains in the oil. Pour in the coconut water and coconut milk, stirring to combine the ingredients. Bring to a boil, then reduce to a simmer and cover, cooking for 10-15 minutes or until the rice is cooked.
