Remember earlier this year when I was all “I’ve been baking with chai nonstop and I have so many recipes to share with you!” and I only posted two? Well, it’s basically April, but here I am with another chai recipe for you to add to your collection. These chai white chocolate blondies are SO. GOOD.
Popular opinion seems to be that brownies are better than blondies and as a die-hard chocolate lover, I can understand that. But I also feel like blondies are severely underrated. Between these blondies and my mini egg blondies, you’ll have a hard time deciding between blondies and brownies!
These blondies are a great option for the person in your life who doesn’t like chocolate, or can’t eat chocolate. I like the white chocolate chips because they add a little texture and really complement the chai spices, but you can leave them out if you want to.
I always have a jar of my homemade chai spice mix on hand, so that’s what I used for these. We’ve got plenty of chai spice in the batter, and we thoroughly cover the top of them with some chai sugar before baking. These are a chai lovers dream! Pair them with a cup of your favourite chai tea and you’ve got the perfect mid-morning or mid-afternoon snack.
Here’s what you’ll need for your chai mix:
- 2 tsp. each ground cardamom, allspice, ground nutmeg, and ground cloves
- 6 tsp. cinnamon
- 4 tsp. ground ginger
Like I said, I always have some of this lying around my house, ready for when my chai inspiration strikes. You won’t use all of the mix for these blondies so feel free to scale down the measurements if you don’t think you’ll be making a bunch of chai treats in the future. These are probably all spices you have in your spice drawer already, so it’s definitely worth making your own instead of buying a more expensive pre-made blend if you can.
These blondies are so easy and they come together in one bowl. No mixer required! We mix together our wet ingredients, add the dry ingredients and white chocolate chips. Then pour into a pan, sprinkle with a chai sugar mix, and bake. You’ll be enjoying these delicious chai white chocolate brownies in no time!
Chai White Chocolate Blondies
Ingredients
- Blondies:
- 3/4 cup unsalted butter, melted and cooled
- 2 cups light brown sugar
- 3 eggs
- 2 tbsp. vanilla extract
- 2 cups flour
- 1 tbsp. chai spice mix
- 1 tsp. baking powder
- 1 tsp. salt
- 1 1/2 cups white chocolate chips
- Topping:
- 1/4 cup sugar
- 2 tsp. chai spice mix
Directions
- Step 1 Preheat oven to 350°F and grease a 9 x 13″ baking dish. Set aside.
- Step 2 Mix together melted butter and brown sugar, then stir in the eggs and vanilla extract.
- Step 3 Add the flour, chai spice and baking powder, mixing to combine. Stir in the white chocolate chips.
- Step 4 Pour mixture into your prepared baking dish.
- Step 5 In a small bowl, make the topping by mixing together the sugar and chai spice mix. Sprinkle over the blondie batter and bake 30-35 minutes, until a toothpick inserted in the center comes out clean. Allow to cool completely before cutting.
