I don’t like bananas. Rumour has it, when I was a kid my mum fed me bananas. Lots and lots of bananas. Now I will choose treat just about any fruit other than a banana; banana bread though? I could eat that all. day. long.
Especially this banana bread. It’s studded with plenty of chocolate chips so it’s a winner. My family has been making this bread for years and it’s about time it graced the blog. I shouldn’t be keeping good recipes from you, right?
This bread is great because you can pretty much put it together in no time at all. Gently mix (but don’t overmix), put it in a loaf pan, let it bake for an hour and you’re good to go! You probably should let it cool before you start stuffing your face with it, but if you don’t want to I’m not going to judge. It’s only natural to want to eat delicious things 😉
Last week was a weird week. Am I the only one that thinks a four-day work week can sometimes seem much longer than a five-day work week. It honestly felt like last week was never going to end. I’m sure glad it did though, I had some serious sleep to catch up on. Sleep deprivation is no fun, you guys. I honestly feel like I need to catch up on like two months of sleep.
Good thing I’ve got this banana bread studded with chocolate to keep me going.
Banana Bread with Chocolate Chips
Ingredients
- 1/4 cup vegetable oil
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs, beaten
- 3 ripe bananas, mashed
- 1 cup chocolate chips
Directions
- Step 1 Preheat oven to 350°F.
- Step 2 Grease a loaf pan and set aside.
- Step 3 In a bowl, combine the flour, sugar, baking soda and salt. Mix in the oil, eggs, and mashed bananas. Stir in the chocolate chips, being careful not to overmix. Pour into the prepared loaf pan and bake for 60-70 minutes, until a toothpick inserted in the centre comes out clean. Allow to cool in the pan for 10-15 minutes, then take out and place on a wire rack to cool completely.
