Everyone loves pizza, right?
I’m personally more inclined to choose an unconventional pizza than your regular ol’ pepperoni, but pizza is pizza and pizza is good. Unless you use anchovies. Then I’m running.
Well, when my knee heals I’ll be running. Until then I’ll bat the pizza away with my crutches 😉
My sister made this pizza when she was home for winter break. It’s inspired by an incredible pizza from The Flying Goat up in Spokane, WA. Their pizza is goooood. If, for whatever reason, you happen to find yourself in Spokane, GO. You won’t be disappointed.
This pizza is fantastic. It’s random and delicious and if you have access to a pizza stone or pizza oven it will make the thin crust out-of-this-world crispy and delicious.
If you don’t have one, come over to my house and I’ll just make this pizza for you. You can’t miss out.

Thai Curry Chicken Pizza
Ingredients
- Pizza dough (homemade or Trader Joe's)
- 1/2 cup Yellow Curry Sauce
- 1 1/2 cups shredded cheese, either cheddar or a blend
- 1 chicken breast, cooked and diced
- 1 russet potato, peeled and diced
- 1 large or 2 medium carrots, peeled and diced
- 2 jalapeños, seeded and diced
- Sriracha, for topping
- Cilantro leaves, for topping
- Parmesan, for topping
Directions
- Step 1 IF USING YOUR OVEN, PREHEAT TO 400°F AND PREPARE A BAKING SHEET
- Step 2 IF USING A PIZZA STONE, HEAT TO 500°F AND SPRINKLE A LITTLE FLOUR ON YOUR PIZZA PEEL
- Step 3 Partially cook your potatoes and carrots so they’re just tender enough to poke a knife through them.
- Step 4 Roll out the dough thinly to your desired shape and place on baking sheet/pizza peel for assembly.
- Step 5 Top dough with curry sauce and sprinkle cheese on top. Add your chicken, potatoes, carrots and jalapeños.
- Step 6 Bake in oven for about 15 minutes or on your pizza stone for about 10 minutes, until the crust is nice and crisp.
- Step 7 Remove from oven/stone. Sprinkle some parmesan around the crust, swirl some sriracha over pizza and sprinkle with some cilantro leaves.
- Step 8 Slice and enjoy!
