Look, guys! A recipe for something that doesn’t involve sugar, chocolate, egg whites, or sprinkles!
If I’m completely honest with you all, it’s been a while since I baked something new. Between the bake sale my coworker and I put on a couple of weeks ago, work, school, and knee pain that keeps getting worse, I haven’t had a chance to channel my creative juices into any new baking projects.
My knee is bad, guys. It’s more consistency painful than it has been for a long time. I had my last prolotherapy injection in March and since then I’ve done nothing but rest, be “patient” and had an MRI. Which my doctor told me on Friday showed ABSOLUTELY NOTHING. Usually, this would be a good thing but really it just leaves us with more questions. I would rather have found out something is torn so we at least know what to do.
Instead I’m going to be doing another 4-6 weeks of physical therapy, which, as my mother so eloquently put it, “does bugger all”. If I’m still in significant pain after that, we’re looking at steroid injections. Which I really need to research more, but either way I’m not looking forward to it.
I just want to do things normal 20-somethings do and get back in the kitchen. Being able to stand for more than 5 minutes would be a dream.
I have made pizza though! This one a couple of weeks ago and another one I made using gluten-free dough. The GF one could use a little tweaking, but it overall wasn’t bad. It really did taste like pizza!
This pizza is super easy and really tasty. If I’m not making my own pizza dough, I like the dough from Trader Joe’s. It’s soft, crisps up really nicely on the bottom, and holds toppings well. The best part about pizza is how customizable it is. My pizzas are usually made up of whatever I have in the fridge, but sometimes I put more thought into it. See? Easy!

Spinach, Red Onion & Chicken Pizza
Ingredients
- 1 batch pizza dough (or 1 bag prepared dough from Trader Joe's), divided in half
- Olive oil, for brushing on the pizza
- 2 cups shredded cheese, cheddar or a blend
- Few handfuls of baby spinach
- 1/2 red onion, diced
- 2 cups diced cooked chicken
Directions
- Step 1 Heat pizza stone or oven to 500°F.
- Step 2 Sprinkle a pizza peel with some flour. Shape one half of the dough and place it on the peel (if cooking the pizza in the oven, lightly spray with cooking spray and assemble the pizza directly on the tray). Lightly brush the olive oil over it and sprinkle over 3/4 cup cheese, followed by a couple of handfuls of baby spinach, half of the red onion and half of the cooked chicken. Sprinkle with 1/4 cup cheese.
- Step 3 Transfer pizza to the pizza stone and cook for 13-15 minutes, until fully cooked.
- Step 4 Repeat the process with the remaining ingredients and enjoy!
