Savoury Cheese Scones with Scallions and Chives

img_5113

I have officially found my new favourite bunch food.

Forget eggs, bacon, pancakes, waffles and French toast. These savoury scones filled with three cheeses and scallions are what brunch dreams are made of. They melt in your mouth in the most deliciously flaky way and are delicious on their own or with just about any other brunch foods you enjoy!

I think I’ve told you about my obsession with cheese before. It’s a very, very real thing. Cheese is magic.

In these scones we’re combining cheddar, Gruyère and a little gouda with scallions and topping them with chives for a little somethin’. Tastes like heaven! They come together in no time at all and I can pretty much guarantee that you’ll want to eat the entire batch in one sitting. Go ahead, I won’t judge.

Grab your friends, your family and try to stop at just one scone. I dare you. Or invite me over and we’ll have mimosas and scones while we talk about life. What could be better than that?! ?

Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp. baking powder
  • 1/4 tsp. baking soda
  • 2 tsp. salt
  • 1 stick (1/2 cup) cold unsalted butter, sliced into small pieces
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 cup shredded sharp cheddar
  • 1/2 cup shredded gruyere
  • 1/4 cup shredded gouda
  • 1/2 cup thinly sliced scallions
  • 1 egg white, beaten
  • Chopped chives, for topping
Directions
  • Step 1 Preheat oven to 400°F and line a baking sheet with parchment. Set aside.
  • Step 2 Combine the flour, baking powder, baking soda and salt in a bowl. Add the cold, sliced butter and mix using your hands or a pastry blender until the mixture resembles coarse crumbs.
  • Step 3 Whisk the two eggs and buttermilk together and add the the flour/butter mixture, mix together. Add the cheeses and scallions and mix until just combined.
  • Step 4 Turn the dough out onto a lightly floured surface and knead until smooth, about 30 seconds. Pat into a 1/2″ thick round of dough. Use a round cookie cutter to cut out the scone circles. Reroll any extra dough and cut out more circles until all of the dough has been used.
  • Step 5 Place on your baking sheet and brush with the beaten egg white. Sprinkle some chives over each scone and bake for 12 minutes.

Blackberry Chocolate Muffins

Muffin time! I really love a good muffin. It probably comes from my…ambivalence…about frosting. Don’t get me wrong, cakes and cupcakes covered in frosting have their place in the world, I just prefer muffins filled with fruit and just a little chocolate. Blackberries and chocolate […]
