Pizza Scones

Combining pizza and scones is one of the best decisions you’ll ever make. These are the perfect snack for a summer picnic or potluck, quick and easy to make and far less greasy than your favourite slice of pizza. And the best thing about these scones? They’re totally customizable. Throw in your favourite pizza ingredients (within reason, these are pretty small drop scones).

I used lots of cheese (DUH!), turkey pepperoni and Italian seasoning. Feel free to use another kind of meat, finely diced vegetables, and the seasonings of your choice. Let’s be real, the most important ingredient in these is the cheese. Cheese is one of life’s greatest pleasures. Unless it’s blue cheese, that is one cheese that I can 100% live without.

You know what I can’t live without but probably should because I have the knees of a 105-year old? 80s night. I went with two of my favourite people to an 80s night on Friday – greyhounds at Scooters first, then dancing – at this point it’s a tradition. I’ve gone before, most recently on St. Patrick’s Day, and my knee always hurts after, but nothing like this time. Which is weird because I think I actually did less dancing this last time than normal…

I literally didn’t leave the couch all weekend, and not because I didn’t want to, but because even just sitting was hurting my knee – standing or walking was completely out of the question. If I’m honest I’m still struggling with it and in a lot of pain, but a girl has to work. Fortunately I don’t have to do too much standing/walking around at work. If I did it would be unbearable.

I’m seeing a different kind of specialist for my knee at the end of the month and I can honestly say I’ve never been so excited for an appointment with a doctor. I’m kind of wishing the rest of the month away so I can get to the end of the month faster. Which is bad, I know, but when you hurt, you hurt. Here’s hoping this new specialist will be able to help me. Cross your fingers and think good thoughts for me, please. This has been going on far too long.

Pizza scones do make it feel slightly better and because they’re so quick and easy to put together, there is very little standing time for my knee. It’s a win-win situation. I haven’t been able to spend time in the kitchen in over a week because of work/life and now my knees so I’m hoping it feels better by the time this weekend rolls around so I can get in the kitchen and do something fun!

Pizza Scones

Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 1/4 tsp. dried Italian seasoning
  • 1/2 tsp. salt
  • 1/4 cup (1/2 stick) cold unsalted butter, cut into cubes
  • 3/4 cup shredded cheddar
  • 1/2 cup turkey pepperoni (or regular pepperoni) finely chopped
  • 3/4 cup milk
  • Olive oil cooking spray
Directions
  • Step 1 Preheat oven to 425°F.
  • Step 2 Combine flour, baking powder, Italian seasoning and salt in a bowl. Cut in the butter with two knives or a pastry blender until the mixture resembles coarse meal. Stir in the cheese and pepperoni, then add the milk, stirring with a fork until it is moist. The dough will still be slightly sticky.
  • Step 3 Drop the dough by round tablespoons onto a baking sheet lightly coated with cooking spray. Spray the tops of the scones with the cooking spray.
  • Step 4 Bake for about 13 minutes, until the scones have browned. Remove from the baking sheet and cool on a wire rack.
