Portland has been teased with some beautiful warm, sunny weather over the last week. So warm and sunny I actually have silly tan lines from the tape on my knee. At least my physical therapist will know where to place it next time. I like to make his life easy.
Is there a cocktail easier to make than a gin & tonic? Gin, tonic, some ice cubes and away you go. Lemon or lime if you’re feelin’ a little fancy.
I got my love for G&T’s from my mum and the stronger, the better.

This lovely little recipe is essentially a lemon poundcake infused with gin and topped with a gin & tonic glaze.
It’ll have you saying “WOOOOOOO!”, I promise. Just ask my friends Mary and Taylor. They were exclaiming “WOOOOOOO” with almost every bite.
I don’t bake with alcohol very often, but after this there’s a good chance more alcohol-infused treats will be appearing on the blog in the future.
This is a perfect spring/summer treat. Pair it with an actual G&T on a sunny day or a cup of tea and you’ll never want anything else ever again.
Gin & Tonic Loaf Cake
Ingredients
- Cake:
- 4 eggs, weighed in their shells
- Unsalted butter, equal to weight of eggs
- Sugar, equal to weight of eggs
- Self-rising flour, equal to weight of eggs
- Zest of two lemons
- Juice of one lemon
- 4 shots of gin
- Glaze:
- 3-4 shots of gin
- Splash of tonic water
- Juice of one lemon
- Powdered sugar, enough to reach your desired glaze consistency
Directions
- Step 1 Make sure all of your ingredients are at room temperature. Preheat oven to 350°F and grease and line a loaf pan.
- Step 2 Beat together your butter and sugar until light, pale, and fluffy. Add the eggs and beat to combine. Mix in the flour until incorporated.
- Step 3 Stir in the lemon zest, lemon juice and gin. The batter will look very loose and wet, but it will come together.
- Step 4 Pour batter into your prepared loaf pan and bake for 40-45 minutes, until cake is baked through. Leave in pan for 5-10 minutes, then transfer to a wire rack.
- Step 5 Combine the ingredients for the glaze to make a loose mixture. Using a fork, poke the top of the cake and pour over some of the glaze. Add more powdered sugar to make a thicker glaze and drizzle/pour over the cake.
