I don’t know if I can really call this a recipe.
There are a whole 3 ingredients and as long as you can melt chocolate and mix things together, you can make these.
You could probably even do it blindfolded (don’t try this at home, folks).
All you need are Rice Krispies (or any other crisped rice cereal), chocolate and Cadbury’s mini eggs. I put these in cupcake liners because they’re going up to Spokane, but even that isn’t totally necessary.
Last year for Easter I shared with you these killer Easter Egg Nest Cupcakes. If cupcakes aren’t your thing or you don’t have the time to make them these are a super speedy, equally delicious alternative.
After finishing culinary school last week I went an entire week without baking and not gonna lie, it felt like part of me was missing.
So Tuesday I made some butterscotch M&M cookies and chocolate chip cookies for my friend Jabari and two of his coworkers on a postgame show for my beloved Portland Trail Blazers.
Then yesterday I made these, the Easter cupcakes and some bread to send up to my sister and her friends for their Easter activities this weekend.
Safe to say I’m the best big sister ever.
Now I have to prepare myself for making 200 truffles next week.
Easter Nests
Ingredients
- 10 oz. Rice Krispies
- 24 oz. chocolate chips
- Cadbury's Mini Eggs
Directions
- Step 1 Over a pot of simmering water, melt the chocolate. Stir constantly until totally melted, you don’t want the chocolate to burn.
- Step 2 Once melted, remove from the heat and combine with Rice Krispies.
- Step 3 Using a cookie scoop or spoon, drop approx. 2 tbsp. of the mixture into cupcake liners or onto a parchment lined sheet pan.
- Step 4 Make a little well in each ball of chocolate Rice Krispies and place 3 mini eggs in each. Place in refrigerator to set.
