Curried Sweet Potato Cauliflower Soup

Soup is good for the soul.

It’s warm, comforting, and perfect for bringing people together around a table on a cold winter’s day.

I came up with this soup recipe a couple of weeks ago. We were snowed in (remember the big PDX snowstorm I told you about?), it was freezing cold, and all anyone wanted for lunches something nice and warm. I’ve said before that we’ve been doing whole30 – this soup had to fit the whole30 requirements, warm us all up and be delicious and guys, it hits the spot!

We’ve got a healthy amount of both cauliflower and sweet potato, with plenty of curry powder to complement them both and make this even more comforting. Soup isn’t soup without onions, carrots and celery so that gets invited to the party too, as does our homemade chicken stock. A little salt and pepper to really make the flavours pop and we have a delicious soup sure to please everyone!

To get more serious today to end the post, I do want to repost something that I posted on my instagram page yesterday that’s been weighing heavily on my heart. I know this isn’t the normal tone of my blog, so please bare with me.

These last couple of weeks have been both inspiring and hard; there have been marches throughout the country, people coming together to give a voice to women, people of colour, the disabled. But we’ve also had some horrific things happen, most recently being the ban that has been put on people from 7 countries, preventing them from entering the United States.

I’m not one to speak much about politics and I realize you come here for picture of baked goods and recipes, pictures of my sweet puppy and the occasional picture from my personal life, not my personal thoughts on the world, but today I’ve got to say it.

I’m a green card holder and I have a British passport. My being a white person from an ally country doesn’t make me better than anyone else. I haven’t had to escape wars or genocides, haven’t had to move somewhere for my family to have a better life. Overall, I’ve led a very lucky, very privileged life.

But others aren’t so lucky. Some of the most incredible, inspiring people I know are refugees. They have experienced things I could never imagine going through and its been a very real, scary part of their lives. I can’t imagine having been separated from my family, or having to flee the place I call home, needing to start over somewhere new and unfamiliar.

We need to stand up and give voices to those that are being silenced, defend the values that people fought for us to have and fight for what we believe in.

Curried Sweet Potato Cauliflower Soup

Ingredients
  • 1 large head of cauliflower, cut into small florets
  • 1 tbsp. olive oil
  • 1 onion, diced
  • 3 medium carrots, diced
  • 3 celery sticks, diced
  • 2-3 tbsp. curry powder
  • Salt and pepper, to taste
  • 6 cups chicken stock + additional water as needed if soup is too thick
  • 2 medium sweet potatoes, peeled and diced
Directions
  • Step 1 Preheat oven to 400°F.
  • Step 2 On a baking sheet, lightly toss cauliflower with some olive oil, salt and pepper. Bake in oven for 20-25 minutes, until nicely roasted.
  • Step 3 While cauliflower is roasting, heat 1 tbsp. olive oil in a large pan. Once oil is hot, add onion, carrots and celery and cook until soft. Add the curry powder, salt and pepper and stir, let cook for 1-2 minutes.
  • Step 4 Add the chicken stock, stir and bring to a boil. Once the soup is boiling, add the sweet potato and reduce to a simmer for 15-20 minutes, until the sweet potato is soft. Add the cauliflower.
  • Step 5 Use an immersion blender to puree the soup, adding more water if the soup is too thick.
  • Step 6 Make sure soup is nice and hot, then serve.
