I am looking for a gingerbread macaron recipe. (Fell in love with them in New York a couple years ago. My first visit to the big apple. So fun!) Anyway, I don’t like filling that is too sweet and yours looks great so think I will give it a go. Only question: Can these be frozen?

Yes, they can be frozen! I’d freeze them for no more than 3 months and put them in the fridge to thaw out. Once they’ve thawed, they should sit at room temp for a bit before eating to get the best results.
