Remember when I made snickerdoodles but instead of rolling them in cinnamon sugar I rolled them in chai spices and called them chuckledoodles? Well, this is the next doodle cookie in the lineup – citrus doodles!
Continuing my citrus theme from last week, these cookies also have lemon zest. They’re made extra citrus-y with the addition of orange zest and lime zest not only in the cookie dough, but also in the rolling sugar.
Citrus cookie. Citrus sugar. Told you I was obsessed with all things citrus.
These cookies are light and fresh. Really everything you want in a cookie to make you feel extra good about your cookie eating choice. It’s a little strange to describe a cookie as light and bright, but that’s exactly what the citrus brings out in them. A basic dough elevated by some zest. And sugar for rolling balls of dough in made special with zest.
Maybe citrus zest is the answer to all of my problems?
Okay, probably not but one or two of these cookies will have you in a significantly better mood than you were in before, I guarantee it. They even made me forget my knee pain (for about 1/2 a second, but still…).
MAGIC COOKIES.
These are the perfect cookies to make any time of year, so grab an orange, a lemon, and a lime and get baking!
Citrus Doodles
Ingredients
- 3/4 cup unsalted butter, softened
- 1 1/4 cup sugar, divided
- 1 egg
- 2 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. cream of tartar
- 1/2 tsp. baking soda
- Zest of 1 orange, 1 lemon, and 1 lime
Directions
- Step 1 In a small bowl, zest all the citrus. Remove about 2 tsp of zest and place in a separate bowl. Add 1/4 cup sugar to the 2 tsp of zest. Combine with a fork and set aside.
- Step 2 In a mixing bowl, add butter and remaining 1 cup sugar. Beat for 1-2 minutes until light and fluffy. Add the egg and beat until combined. Add flour, baking powder, cream of tartar, and baking soda, mixing until combined. Slowly add in zest.
- Step 3 Line a baking sheet with parchment paper. Roll cookies into 3/4-1inch balls. Then roll them in the sugar/zest mixture, coating generously. Place ball on cookie sheet and using a flat bottom of a cup, press the ball slightly to form a disc. Bake for 10-12 minutes. Remove and cool on wire rack
