Happy 2016!
I hope the first few days of the New Year are treating you well and that any resolutions you made are going well 😉
To start off 2016, I’m staying away from a sweet recipe and bringing you something so deliciously cheesy, you’ll probably have a hard time not eating them.
This recipe is an adaptation of one I was given when I took my breads class last year. They have 3 (!!) kinds of cheese and a few red pepper flakes for a little kick.
And best of all? They come together in no time at all.
These are great as a snack, an appetizer for a dinner party, or just when you need a cheese fix. Everyone needs a cheese fix, right?
Ingredients
- 1 1/2 sticks (6 oz.) unsalted butter, softened
- 1 tbsp. salt
- 1 tsp. red pepper flakes
- 2 1/4 cups (13 oz.) all-purpose flour
- 1/2 cup (4 oz). sour cream
- 2 oz. each cheddar, parmesan and romano, shredded
Instructions
- Preheat oven to 350°F.
- In a mixer, or by hand, cream together the butter, salt and red pepper flakes.
- Add flour and sour cream and beat until combined (if it still looks crumbly/flaky, that's okay). Add in cheeses and continue beating until incorporated and a dough has formed.
- Roll out dough to 1/4" thickness and use a small circle cookie cutter to cut out the coin shapes.
- Place on parchment lined baking sheets and bake for 15-17 minutes, until golden.
