Brown Butter M&M Chocolate Chip Cookies

Coming at you with another brown butter cookie recipe because I really just cannot get enough. Brown butter makes everything better. It’s just a fact. Say hello to brown butter M&M chocolate chip cookies!

These may not be the very best brown butter cookie variation, but they are pretty damn good. And they’re fun, which is exactly what we need during times like these. M&Ms, chocolate chips, plenty of brown butter and vanilla bean paste. What more could you want in a fun cookie? 

Originally this week I was going to remake and reshoot a different cookie. I got my butter out to soften and was getting everything together when I realized I was missing a critical ingredient to those cookies. So I made use of what I had in my cupboards and threw some M&Ms and chocolate chips in my favourite brown butter cookie dough and called it good. 

Pretty sure this will make for a very good cookie for this week’s cookie Wednesday!

Cookie Wednesday

Have I told you all about cookie Wednesday? If not, here’s a brief rundown. I work in a (normally) very busy clinic. A few years ago my coworker and I started doing bake sales to raise money for the charity our clinic was supporting. As a baker, I’m pretty much baking every week anyway and who better to test recipes on than the doctors, nurses, and staff that I work with? I’m not sure how long I’ve been doing this, but I really can’t remember not doing it and I don’t hear any complaints when I bring them so I’ll keep bringing cookies until I’m told not to! I even have a cookie request board on my door so people can tell me what kinds of cookies they want me to bring.

Anyway, if you want a fun cookie, these are the ones to make. As a bonus, you can treat yourself to a few M&Ms while they’re baking!

Brown Butter M&M Chocolate Chip Cookies

Ingredients
  • 1 cup (2 sticks) unsalted butter
  • 1/2 cup sugar
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 2 tsp. vanilla bean paste (or vanilla extract)
  • 2 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp cream of tartar
  • 1 cup semisweet chocolate chips
  • 1 cup M&Ms
Directions
  • Step 1 Brown the butter by melting over a medium heat. Let the butter foam and you will begin to see it change colour.
  • Step 2 Once you see brown milk solids at the bottom of your pan and smell a nutty aroma, remove from the heat and place in a bowl. Be sure to scrape out the sediment because that will give these cookies an incredible nutty flavour. Set aside to cool slightly.
  • Step 3 Once cool, combine browned butter with both sugars in a mixing bowl and cream together. Add the eggs, one at a time, then the vanilla bean paste.
  • Step 4 Add baking soda, salt, cream of tartar, and all-purpose flour, stirring to combine. Once dry ingredients have been incorporated, stir in the chocolate chips and M&Ms.
  • Step 5 Place dough in the refrigerator for at least 1 hour. The longer it sits in the fridge, the better the cookies will be!
  • Step 6 Preheat oven to 350°F.
  • Step 7 Remove dough from fridge and scoop onto parchment-lined baking sheets, spacing a couple of inches apart because cookies will spread during baking.
  • Step 8 Bake for 10-12 minutes, until edges are golden brown. Allow cookies to sit on pan for a couple of minutes before transferring to wire racks to cool completely.
