I didn’t post a single new recipe in October so consider these brown butter chai cookies my apology to you all. Do you ever just have days/weeks/months when you want to just go completely off the grid? No phone, no social media, the only interactions you have with people are face to face? That’s what I felt like during parts of last month.
I feel so much better both mentally and physically when I’m not scrolling through social media, waiting for a text back, and just living in the moment.
I’ll get off my soap box now, but if I disappear again, that’s why.

Chai is maybe one of the most comforting, cozy flavours for me. I love a cup of chai tea and I really, really love these brown butter chai cookies.
By now, we all know that brown butter makes everything better. There’s no question about that. Brown butter & chai though? That’s a damn good combination!
These cookies are so easy to make. They’re similar to a snickerdoodle, but not quite the same thing. Either cookie will give you cozy vibes, but because these have a combination of spices in them, I think they’re a little cozier.
I made my own chai spice mix a couple of months ago and used it in these cookies. To make it all you need is:
- 2 tsp. ground cardamom
- 2 tsp. allspice
- 2 tsp. ground nutmeg
- 2 tsp. ground cloves
- 6 tsp. cinnamon
- 4 tsp. ground ginger
Mix it all together and store it in a container for all of your chai baking needs!
These cookies are soft, cozy, comforting, and really just everything you need this autumn and winter. I hope you love them!
Brown Butter Chai Cookies
Ingredients
- 1 cup unsalted butter
- 1 cup sugar
- 1 cup light brown sugar
- 2 eggs
- 1 tbsp. vanilla extract
- 2 3/4 cup all purpose flour
- 2 tbsp. Chai spice
- 1 1/2 tsp. Baking powder
- 1/2 tsp. Salt
- 1/4 tsp. Baking soda
- Sugar, for rolling
Directions
- Step 1 Preheat oven to 350°F.
- Step 2 Brown the butter by melting over a medium heat. Let the butter foam and you will begin to see it change colour. Once you see brown milk solids at the bottom of your pan and smell a nutty aroma, remove from the heat and place in a bowl. Be sure to scrape out the sediment because that’s what make brown butter magical.. Set aside to cool slightly.
- Step 3 In a bowl, combine flour, chai spice, baking powder, baking soda, and salt. Set aside.
- Step 4 In a large bowl, cream together the cooled brown butter and both sugars. Add in the eggs, one at a time, then stir in the vanilla extract.
- Step 5 Pour the dry ingredients into your bowl and stir to combine everything together.
- Step 6 Place the dough in the fridge for about an hour.
- Step 7 Scoop 1-2 tablespoons of dough for each cookie, roll into a ball, then roll in sugar. Place on a baking sheet.
- Step 8 Bake cookies for 10-11 minutes. Allow to cool slightly on a baking sheet before transferring to a wire rack to cool completely.
