Breakfast Sausage Patties

I hardly have any breakfast/brunch recipes on here. There are a couple from a Mother’s Day brunch article I did for The Oregonian a couple of years ago but that’s pretty much it. Today, we’re changing that.

These sausage patties would make the perfect addition to your breakfast repertoire. They’re small, full of flavour and taste great on their own or with your traditional brunch foods such as eggs and potatoes. And as an added bonus to anyone following certain meal plans or diets, these little patties are 100% whole30/paleo friendly.

The best part about this recipe (beyond the delicious taste) is that it requires very few ingredients; you probably have most of them already lying around your spice cupboard. Get yourself some good quality ground pork and you’ll be good to go!

This past weekend I was lucky enough to be able to teach three sweet girls how to bake cookies! These girls are originally from the Congo, spent time at a refugee camp in Rwanda and were resettled to Portland a couple of years ago. I’m so, so lucky to have been able to get to know them and the rest of their family. We made my butterscotch M&M cookies and snickerdoodles. These girls killed it, they did such a great job!

Grab yourself some ground pork, and head to the kitchen and make these patties. Then maybe follow it up with a cookie or two…sometimes its good to be bad 😉

Breakfast Sausage Patties

Ingredients
  • 2lb. ground pork
  • 2 tsp. salt
  • 1 1/2 tsp. pepper
  • 2 tsp. dried thyme
  • 1/2 tsp. dried rosemary
  • 1/2 tsp. red pepper flakes
  • Pinch nutmeg
Directions
  • Step 1 In a bowl, combine all ingredients, making sure the spices are all evenly dispersed.
  • Step 2 Shape the meat mixture into patties and set aside.
Heat a small amount of olive oil in a frying pan and set over high heat. Once the oil is hot, place the patties in the pan (don’t overcrowd) and cook for 6-8 minutes on each side, until fully cooked through and golden brown. This may take more or less time depending on the thickness of your patties.
  • Step 3 Serve by themselves, as a breakfast sandwich, or as part of brunch.
