Berry Prosecco Popsicles

It has been HOT in Portland. I’m not even kidding, I don’t remember the last day we had that was below 90°F. It feels like it’s been forever.

When it’s that hot, the last thing I want to do is turn my oven on. As much as I love baking, and I really love it, I do have my limits. Hot days call for no oven time and treats you can just throw in the freezer.

Really what I’m saying is, hot days call for popsicles.

And for the adults among us, these berry prosecco popsicles are the icy summer treat we’ve been looking for. Three ingredients is all we need. Berries (I used both blueberries and strawberries), prosecco, and pink lemonade! You can use regular lemonade if you prefer, but I like the very subtle pink hue you can get from the pink lemonade.

We put our berries in our popsicle molds, fill them 3/4 full with prosecco, and top off with the pink lemonade. Then we put the lid on, place our popsicle sticks in them and send them to the freezer overnight to get nice and icy cold.

Minimal effort, no oven time, and perfectly refreshing. It’s really all you want out of a summer treat!

Berry Prosecco Popsicles

Ingredients
  • Berries, of your choice
  • 1 bottle of prosecco
  • Pink lemonade
Directions
  • Step 1 Place a few berries in each popsicle mold. Fill the mold 3/4 full with the prosecco, then add the pink lemonade until it reaches the top. Place the lid on the popsicle mold and place the popsicle sticks. Put in freezer for at least 6 hours, or overnight.
  • Step 2 To remove popsicles from the mold, submerge briefly in warm water (about 15-20 seconds).
