Apple Crumble

 

This is 100% my favourite month of the year. Here in Oregon, it isn’t too rainy yet. The mornings are crisp, it warms up a little during the day and the leaves are the colours of sunsets. It is truly the most beautiful month of the year.

Every year, I make the drive out to Hood River with some friends for the Hood River Fruit Loop. It’s a lovely drive around Hood River with various autumnal stops where you can grab a pumpkin, go apple and pear picking, or sample some local wines and ciders. I went a couple of weeks ago and came home with a pretty impressive haul of apples and pears.

Obviously, coming home with that much fruit means it’s time to head to the kitchen and bake. Normally a bushel of apples means apple pie. However, standing is hard so I didn’t want to have to make and roll out pie dough. An apple crumble was the answer!

Crumbles are easy. Rub together some flour and butter, stir in your oats and brown sugar and your crumble topping is good to go. Next, chop up your apples (I used a combination of Granny Smith, Honeycrisp, and Spartan). Mix these apples up with some brown sugar, flour, and cinnamon and that’s your filling done.

To bake the crumble, make sure you have a nicely buttered pie dish ready to go. Pour in the apple filling, then generously sprinkle the crumble topping on top. Use it alllllll. We want some crumble with our apples.

Now we go to the oven and bake it for 40-45 minutes. Ready to dive in? Hold your horses. We’re pairing this apple crumble with liberal amounts of hot custard. It’s a match made in heaven.

This is the perfect autumn dessert. It’s quick and easy to put together, smells amazing, and tastes delicious. If you haven’t already, go apple picking, then come home and make this super tasty apple crumble. Then invite me over. I’ll bring the custard!

Apple Crumble

Ingredients
  • Crumble:
  • 3 1/2 oz. all-purpose flour
  • 2 1/2 oz. unsalted butter, cubed
  • 2 oz. oats
  • 3 1/2 oz. light brown sugar
  • Filling:
  • 1 1/2 lb. apples
  • 3 oz. light brown sugar
  • 1 1/2 tbsp. flour
  • 3/4 tsp. cinnamon
Directions
  • Step 1 Preheat oven to 350°F. Lightly butter a pie dish and set aside.
  • Step 2 Blend the flour and butter together in a food processor, or with your fingers, until the mixture resembles breadcrumbs. Stir in the oats and brown sugar and set aside.
  • Step 3 Peel, core, and dice your apples. Add the brown sugar, flour, and cinnamon and stir to combine.
  • Step 4 Pour apple mixture into prepared pie pan, then sprinkle the crumble mixture on top. Bake for 40-45 minutes, until topping is browned, the mixture is bubbling and apples are cooked.
  • Step 5 Serve with hot custard, heavy cream, whipped cream, or a scoop of vanilla ice cream.
