Peanut Butter Blossoms

Ok, I’m going to start off this post being totally honest with you. I don’t like peanut butter, so these are not the cookies for me. However, if you’re like most people I know and you love peanut butter, these peanut butter blossoms are definitely the cookies for you. They are packed FULL of peanut butter flavour.

For all of my peanut butter friends and family, I included these in this year’s cookie box (which will have it’s big reveal later this week).

A couple of things you need to know to make the perfect peanut butter blossoms: creamy peanut butter, refrigerate your dough, and freeze the Hershey’s kisses before you add them to the cooked cookies. This’ll make sure the kisses stick to the cookies, but don’t melt into chocolate puddles.

These cookies have a heavy peanut butter flavour, we achieve this by using a higher proportion of peanut butter to unsalted butter. I promise, eating these will make you think you’re eating a spoon of peanut butter straight from the jar. My grandmother loved these and I didn’t even know she liked peanut butter. She’s also notoriously hard to please, so I’d call that a win.

Peanut Butter Blossoms

Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/2 cup sugar
  • 1/2 cup packed light brown sugar
  • 3/4 cup creamy peanut butter
  • 1 egg
  • 1 1/2 tsp. vanilla extract
  • 1 tbsp. milk
Directions
  • Step 1 Unwwrap and freeze your Hershey Kisses.
  • Step 2 In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  • Step 3 In a large bowl, cream together the butter, both sugars, and peanut butter until light and fluffy.
  • Step 4 Add in the egg, vanilla extract, and milk. Mix to combine.
  • Step 5 Pour in half of the flour mixture and stir until combined. Repeat with the second half of the flour. Refrigerate the dough for 1 hour.
  • Step 6 Preheat oven to 350°F. Line two baking sheets with parchment paper.
  • Step 7 Scoop the dough into 1-tablespoon balls, roll in sugar, and place on the baking sheet. Bake for 10-12 minutes.
  • Step 8 Remove the cookies from the oven and place a Hershey Kiss in the centre of each cookie. Cool slightly, then place on a wire rack to cool completely.
