Chocolate Lava Cake

Do you ever have days when you get home from a lousy day at work and you just need some chocolate and a glass of red wine? Let me introduce you to my new favourite pairing: chocolate lava cake and Knotty Vines Cabernet Sauvignon. It’s the absolute perfect indulgence. 

Let’s talk about why this pairing works so well. Chocolate lava cake is rich, indulgent, and perfectly gooey in the middle. The Knotty Vines Cabernet Sauvignon is just as indulgent as the chocolate lava cake and the mocha and black cherry notes are the perfect complement to the chocolatey treat.

Look, both the chocolate lava cake and the wine are delicious on their own, but together? It’s the ultimate pairing.

Can we also talk about how pretty the wine bottle is and how good it looks with the little mini lava cakes? I’m going to be honest, I tend to buy my wine based on the bottle label, whatever colours are used, and how much they cost. What can I say, I’m a visual person and while I like an expensive wine, my budget is much better suited to affordable wines like the Knotty Vines collection. I love the beautiful turquoise colour used and who can’t identify with a label featuring knotty, twisted vines? It almost perfectly depicts this crazy year! It’s also a screw top bottle, making it much easier to get into and enjoy when I’m ready to let my knotty side out. 

Did you know my name, Bryony, is a wild climbing vine with little flowers? I mean, how perfect is this wine for me? 

Red wine and chocolate. Truly the best combination. 

Chocolate Lava Cake

Let’s talk about how to make the lava cake. It comes together in no time, leaving your more time to enjoy your wine and your treat.

Our ingredients are simple. Bittersweet chocolate and unsalted butter, melted for ultimate gooeyness. Eggs, a couple of extra egg yolks and sugar, our traditional cake ingredients. Finally, just a little flour and some espresso powder. Espresso powder elevates the chocolate taste and it’s a good match for the mocha flavours in the wine. 

Mix it all together, divide between some ramekins, and bake for 6-10 minutes. Easy peasy. By the time they’re done baking you’ll be ready for your second glass of wine!

So here’s what you need to do. Gather your ingredients and a bottle of Knotty Vines Cabernet Sauvignon. Open the wine, pour yourself a glass, and enjoy it as you whip up the chocolate lava cakes. You’ll be indulging and living your best life in no time!

Chocolate Lava Cake

Ingredients
  • 6 oz. bittersweet chocolate
  • 4 oz. (1 stick) unsalted butter
  • 2 eggs
  • 2 egg yolks
  • 1/4 cup sugar
  • 2 tbsp. flour
  • 1 heaped tsp. espresso powder
Directions
  • Step 1 Preheat oven to 450°F. Grease 4 ramekins and dust with cocoa powder.
  • Step 2 Melt the chocolate and unsalted butter. Set aside to cool slightly.
  • Step 3 Whisk together the eggs, egg yolks, and sugar until it is pale yellow and has reached a relatively thick consistency.
  • Step 4 Add in the chocolate mixture and whisk to combine. Fold in the flour and espresso powder.
  • Step 5 Divide batter evenly between the 4 ramekins and bake for 6-10 minutes. The edges of the cakes should be set and the centre a little jiggly.
  • Step 6 Remove from the oven, top with powdered sugar and enjoy!
